Ingredients
- 12 oz rotini or bowtie pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced and quartered
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/3 cup black olives, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley or basil
- Salt and pepper, to taste
2 . For the Dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
- Cook pasta until al dente. Drain and rinse under cold water.
- Prepare and chop all vegetables and herbs.
- In a small bowl, whisk together dressing ingredients until well combined.
- In a large bowl, combine cooled pasta, vegetables, olives, cheese, and herbs.
- Pour dressing over salad and toss well.
- Chill for 30 minutes before serving if time allows.
Notes
- If making ahead, reserve a few tablespoons of dressing and stir it in just before serving to freshen things up. Add protein like grilled chicken or chickpeas for a more filling version.
