Ingredients

Scale
  • lbs boneless, skinless chicken breast or thighs, cubed
  • 1 cup fresh pineapple, cubed
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small red onion, chopped
  • Wooden or metal skewers

2 . For the Marinade:

  • 1/3 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger (optional)
  • 2 tbsp olive oil

  • Marinate chicken in remaining mixture for 1–2 hours.
  • Soak wooden skewers if using.
  • Prep veggies and pineapple into equal-sized chunks.
  • Thread chicken, pineapple, and veggies onto skewers.
  • Grill on medium-high heat, turning every 3–4 minutes, about 12–15 minutes total.
  • Brush with reserved marinade in the final minutes.
  • Let rest before serving.
