- 1 can diced tomatoes (14.5 oz)
- 1 tbsp tomato paste
- 4 cups beef or vegetable stock
- 1 tsp Worcestershire sauce
- 1 cup green beans, trimmed
- 1 cup corn kernels
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp dried thyme or 2 tsp fresh thyme
- 1–2 bay leaves
- Fresh parsley for garnish
Instructions
- Dice all vegetables and mince the garlic.
- In a large pot, sauté onions, carrots, and celery in olive oil until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in garlic, tomato paste, diced tomatoes, and Worcestershire sauce.
- Pour in the stock and bring to a gentle boil.
- Add potatoes, green beans, and corn. Reduce heat, cover, and simmer for 25–30 minutes.
- Season with salt, pepper, and herbs. Remove bay leaves before serving.
- Serve hot, garnished with parsley or shredded cheese.
Notes
- Swap potatoes with sweet potatoes or butternut squash for variety.
