  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 23 medium potatoes, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tbsp tomato paste
  • 4 cups beef or vegetable stock
  • 1 tsp Worcestershire sauce
  • 1 cup green beans, trimmed
  • 1 cup corn kernels
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried thyme or 2 tsp fresh thyme
  • 12 bay leaves
  • Fresh parsley for garnish


Instructions

  • Dice all vegetables and mince the garlic.
  • In a large pot, sauté onions, carrots, and celery in olive oil until softened.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in garlic, tomato paste, diced tomatoes, and Worcestershire sauce.
  • Pour in the stock and bring to a gentle boil.
  • Add potatoes, green beans, and corn. Reduce heat, cover, and simmer for 25–30 minutes.
  • Season with salt, pepper, and herbs. Remove bay leaves before serving.
  • Serve hot, garnished with parsley or shredded cheese.

Notes

  • Swap potatoes with sweet potatoes or butternut squash for variety.
  • Add cooked pasta or rice to make it more filling.
  • Freeze leftovers in portioned containers for easy meals later.
