- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp dried oregano
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and sauté for 10 minutes, stirring occasionally. Remove from skillet and set aside.
- In the same skillet, cook the ground turkey, breaking it up with a spoon, for 5-7 minutes until browned. Season with cumin, paprika, chili powder, oregano, salt, and pepper.
- Add the diced onion, bell pepper, and minced garlic to the skillet. Cook for 3-4 minutes until softened.
- Return the sweet potatoes to the skillet and stir everything together. Cook for another 5 minutes, allowing the flavors to combine.
- Garnish with fresh cilantro and serve hot.

- Feel free to add cheese or jalapeños for an extra kick.
