With a variety of spices and a touch of cilantro, it’s a balanced meal that’s perfect for busy weeknights. This recipe is quick, healthy, and makes for great leftovers!

Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and sauté for 10 minutes, stirring occasionally. Remove from skillet and set aside.
  2. In the same skillet, cook the ground turkey, breaking it up with a spoon, for 5-7 minutes until browned. Season with cumin, paprika, chili powder, oregano, salt, and pepper.
  3. Add the diced onion, bell pepper, and minced garlic to the skillet. Cook for 3-4 minutes until softened.
  4. Return the sweet potatoes to the skillet and stir everything together. Cook for another 5 minutes, allowing the flavors to combine.
  5. Garnish with fresh cilantro and serve hot.

Notes

  • Feel free to add cheese or jalapeños for an extra kick.
  • Serve with a side salad, roasted vegetables, or quinoa for a full meal.
