Instructions
- Preheat the oven to 400°F (200°C). Toss the sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then spread them in a single layer on a baking sheet. Roast for 25-30 minutes until tender.
- While the sweet potatoes roast, heat the remaining olive oil in a skillet over medium heat. Add the ground turkey, breaking it apart. Season with cumin, paprika, salt, and pepper. Cook until browned and cooked through (about 6-8 minutes).
- Add the chopped onion and garlic to the skillet and sauté for 3-4 minutes until the onion softens.
- Add the roasted sweet potatoes to the skillet, stirring to combine. Taste and adjust seasoning if necessary.
