  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp olive oil, divided
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then spread them in a single layer on a baking sheet. Roast for 25-30 minutes until tender.
  2. While the sweet potatoes roast, heat the remaining olive oil in a skillet over medium heat. Add the ground turkey, breaking it apart. Season with cumin, paprika, salt, and pepper. Cook until browned and cooked through (about 6-8 minutes).
  3. Add the chopped onion and garlic to the skillet and sauté for 3-4 minutes until the onion softens.
  4. Add the roasted sweet potatoes to the skillet, stirring to combine. Taste and adjust seasoning if necessary.
  5. Serve immediately or store for later use.

  • For extra flavor, roast the sweet potatoes longer to get crispy edges.
