- 1 cup cooked rice or quinoa
- 1 onion, finely chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp dried oregano
- 1/2 cup shredded cheese (optional)
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Sour cream or salsa, for topping
Instructions
- Cook the rice or quinoa according to package directions.
- In a large skillet, cook the ground beef over medium-high heat, breaking it apart until browned.
- Add the onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
- Stir in the cumin, paprika, chili powder, and oregano. Let the spices bloom for 2-3 minutes.
- Serve the beef mixture over rice or quinoa, and top with your desired toppings.
- Garnish with avocado, cilantro, and a squeeze of lime.
