  • 1 lb ground beef
  • 1 cup cooked rice or quinoa
  • 1 onion, finely chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1/2 cup shredded cheese (optional)
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Sour cream or salsa, for topping

Instructions

  • Cook the rice or quinoa according to package directions.
  • In a large skillet, cook the ground beef over medium-high heat, breaking it apart until browned.
  • Add the onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
  • Stir in the cumin, paprika, chili powder, and oregano. Let the spices bloom for 2-3 minutes.
  • Serve the beef mixture over rice or quinoa, and top with your desired toppings.
  • Garnish with avocado, cilantro, and a squeeze of lime.
