- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup corn kernels (fresh or frozen)
- 1 medium tomato, diced
- 1/4 cup red onion, finely chopped
- 2 tbsp cilantro, chopped
- 1 tbsp lime juice
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper, to taste
Instructions
- Preheat grill to medium-high heat.
- In a bowl, season shrimp with olive oil, garlic powder, paprika, salt, and pepper.
- Grill shrimp for 2-3 minutes per side until pink and opaque.
- In a separate bowl, combine corn, tomato, onion, cilantro, and lime juice to make salsa.
- In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, cayenne (optional), and salt and pepper.
- Assemble the bowl with a base of rice (optional), grilled shrimp, corn salsa, and creamy sauce on top.
Notes
- For an extra crunch, add some crushed tortilla chips or pumpkin seeds on top.
- Make sure to serve the avocado fresh to prevent browning.
