Description

This Grilled Shrimp Bowl with Avocado, Corn Salsa & Creamy Sauce is a refreshing and satisfying meal that brings together smoky grilled shrimp, a vibrant corn salsa, and a creamy, tangy sauce. Perfect for a weeknight dinner or a weekend gathering, it’s quick to prepare and full of flavor.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup corn kernels (fresh or frozen)
  • 1 medium tomato, diced
  • 1/4 cup red onion, finely chopped
  • 2 tbsp cilantro, chopped
  • 1 tbsp lime juice
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper, to taste

Instructions

  • Preheat grill to medium-high heat.
  • In a bowl, season shrimp with olive oil, garlic powder, paprika, salt, and pepper.
  • Grill shrimp for 2-3 minutes per side until pink and opaque.
  • In a separate bowl, combine corn, tomato, onion, cilantro, and lime juice to make salsa.
  • In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, cayenne (optional), and salt and pepper.
  • Assemble the bowl with a base of rice (optional), grilled shrimp, corn salsa, and creamy sauce on top.

Notes

  • For an extra crunch, add some crushed tortilla chips or pumpkin seeds on top.
  • Make sure to serve the avocado fresh to prevent browning.
