- 2 cups shredded cooked chicken (breast or thigh)
- 1 can chopped green chilies (or 4-5 fresh roasted green chilies)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6–8 flour or corn tortillas
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup sour cream
- 4 oz cream cheese
- 1/2 cup chicken broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- Salt and pepper, to taste
- Fresh cilantro and lime wedges for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Shred cooked chicken and set aside.
- Sauté onion and garlic in a saucepan until soft. Add green chilies and spices, then stir in chicken broth, cream cheese, and sour cream until smooth.
- Mix half of the sauce with the shredded chicken.
- Warm tortillas and fill each with chicken mixture and cheese, then roll tightly. Place seam-side down in a baking dish.
- Pour remaining sauce over enchiladas and sprinkle with remaining cheese.
- Cover with foil and bake for 20 minutes. Uncover and bake 5–10 minutes until cheese is golden.
- Garnish with cilantro and lime before serving.
