  • 2 large eggs, room temperature

  • ¾ cup buttermilk, room temperature

2. For the buttercream frosting:

  • ½ cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream or milk


Instructions

  • Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  • Sift together flour, baking powder, baking soda, and salt in a bowl.
  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, then vanilla, beating well.
  • Alternate adding dry ingredients and buttermilk, starting and ending with dry ingredients. Mix gently.
  • Fill liners two-thirds full and bake 18-22 minutes until a toothpick comes out clean.
