Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup whole milk, room temperature
  • 1/2 cup rainbow jimmies sprinkles


Instructions

  • Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
  • Sift together flour, baking powder, and salt.
  • Beat butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each. Stir in vanilla.
  • Alternate adding flour mixture and milk, mixing until just combined.
  • Fold in sprinkles gently.
  • Fill cupcake liners 2/3 full with batter.
  • Bake 18-22 minutes until toothpick comes out clean.
  • Cool cupcakes in pan 5 minutes, then transfer to wire rack to cool completely before frosting.
