Ingredients
- 4 cups cold, day-old cooked jasmine rice
- 2 tablespoons vegetable oil (plus more as needed)
- ½ cup diced carrots
- ½ cup frozen peas
- ½ onion, diced
- 3 green onions, chopped
- 2 large eggs
- 1 cup cooked protein (chicken, shrimp, or tofu)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the Blackstone griddle to medium-high heat.
- Add oil and sauté onions, carrots, and peas until slightly softened.
- Push veggies to the side, scramble the eggs, and mix them in.
- Add rice and break it up with a spatula. Cook until heated through and starting to brown.
