  • 1 lb (450g) brioche or challah, cut into 1-inch cubes

  • 6 large eggs

  • 1½ cups whole milk

  • ½ cup heavy cream

  • ½ cup packed brown sugar

  • ¼ cup granulated sugar

  • 2 tsp vanilla extract

  • 1½ tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • Pinch of salt

Streusel Topping

  • ⅓ cup all-purpose flour

  • ⅓ cup brown sugar

  • ½ tsp cinnamon

  • 4 tbsp cold unsalted butter, cubed

  • Pinch of salt


Instructions

  1. Cut bread into cubes and lightly toast if fresh.

  2. Whisk eggs, milk, cream, sugars, vanilla, cinnamon, nutmeg, and salt in a large bowl.

  3. Pour custard over bread in a greased 9×13 dish. Press bread down to soak.

  4. Cover and refrigerate overnight (or at least 4 hours).

  5. Mix streusel ingredients until crumbly; chill until ready to use.

  6. Preheat oven to 350°F. Sprinkle streusel over casserole.

  7. Bake uncovered for 45–50 minutes until golden and set.

  8. Cool slightly before serving with maple syrup or toppings of choice.

Notes

For extra flavor, try using cinnamon raisin bread or swirling cream cheese before baking. Add fresh berries before baking for a fruity twist.
