Thinly sliced cucumbers and onions are tossed in a simple vinegar dressing balanced with a touch of sugar and seasoned with salt and pepper. This easy-to-make salad is ideal for summer meals or whenever you crave something crisp and bright.


Ingredients

  • 2 large English cucumbers, thinly sliced
  • 1 medium red or white onion, thinly sliced
  • ½ cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Optional: 2 tablespoons chopped fresh dill or parsley


Instructions

  • Thinly slice cucumbers and onions.
  • In a bowl, whisk vinegar, sugar, salt, and pepper until sugar dissolves.
  • Combine cucumbers and onions in a large bowl.
  • Pour dressing over veggies and toss gently to coat evenly.
  • Stir in fresh herbs if using.
  • Refrigerate for at least 10 minutes before serving.
  • Toss again before serving and adjust seasoning if needed.
