- 8 oz penne pasta
- 1 cup sliced mushrooms (white or cremini)
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions, reserving 1 cup of pasta water. Set aside.
- Heat olive oil in a skillet over medium heat and cook the chicken until golden and cooked through. Slice into strips and set aside.
- In the same skillet, sauté garlic, mushrooms, and asparagus until tender.
- Add the heavy cream and Parmesan, stirring to create a smooth sauce. Let it simmer for 2-3 minutes.
- Add the pasta and chicken, tossing gently to combine. Adjust the sauce with reserved pasta water as needed.
Notes
- For extra flavor, add a splash of white wine to the pan when sautéing the mushrooms and asparagus.
