Ingredients

  • 2 cups cake flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • Cotton candy flavoring
  • Pink and blue food coloring
  • 2 cups heavy cream
  • 3 cups powdered sugar
  • Cotton candy (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F and prepare two 8-inch round cake pans by greasing and flouring them.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  6. Divide the batter into three bowls. Add pink food coloring to one, blue to another, and leave the third as is for a white layer.
  7. Pour the colored batters into the pans, alternating the colors.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow the cakes to cool completely before frosting.
  10. For the frosting, whip the heavy cream and powdered sugar until stiff peaks form. Add cotton candy flavoring to taste.
  11. Frost the cooled cake with the cotton candy-flavored frosting.
  12. Garnish with cotton candy (optional) and serve!

Notes

  • For the fluffiest cake, ensure that you don’t overmix the batter. Store leftover cake at room temperature for up to 2 days or in the fridge for longer storage.
