Cottage Cheese Bread

Description

  • 3 ½ cups all-purpose flour (plus more for dusting)
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¾ cup warm water (110°F)
  • 1 tsp salt
  • 2 tbsp honey (or sugar)
  • 2 large eggs (room temperature)
  • 2 tbsp melted butter
  • 1 cup cottage cheese (full-fat preferred)

Instructions

  1. In a large bowl, mix warm water, honey, and yeast. Let sit until frothy.

  2. Whisk eggs, melted butter, and cottage cheese in another bowl.

  3. Combine wet and dry ingredients, adding flour gradually with salt.

  4. Knead the dough until smooth and elastic.

  5. Place in a greased bowl, cover, and let rise until doubled (about 1-1.5 hours).

  6. Punch down, shape into a loaf, and place in a greased loaf pan.

  7. Cover and rise again for 30-40 minutes.

  8. Bake at 350°F for 35-40 minutes until golden brown.

  9. Cool before slicing.

Notes

For extra flavor, add 1 tsp dried herbs like oregano or thyme.

To get a glossy crust, brush the top with milk or egg wash before baking.

Swap half the flour for whole wheat to boost fiber content.
