Ingredients

  • 2 cups corn kernels (fresh or thawed frozen)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced onions or green onions
  • 2 cloves garlic, minced
  • 1 jalapeño, diced (optional)
  • 1 tbsp fresh lime juice
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, chopped (for garnish)


Instructions

  • Preheat oven to 350°F (175°C).
  • Prepare corn kernels and drain if necessary.
  • In a bowl, blend cream cheese and sour cream until smooth.
  • Stir in shredded cheeses, onions, garlic, jalapeño, and corn.
  • Season with lime juice, cumin, chili powder, salt, and pepper. Mix well.
  • Transfer to a baking dish and smooth the surface.
  • Bake for 20 minutes until golden and bubbly.
  • Garnish with fresh herbs before serving.
