This Club Sandwich Pasta Salad brings together all the best flavors of a classic club sandwich—crispy bacon, juicy tomatoes, turkey, cheese, and a creamy dressing—into a delicious and satisfying pasta dish. Ingredients

  • 12 oz rotini pasta
  • 6 slices bacon, cooked and crumbled
  • 1 ½ cups cooked turkey (or chicken), diced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded romaine or iceberg lettuce
  • 1 cup cheddar or Swiss cheese, cubed or shredded

For the Dressing:

  • ½ cup mayonnaise
  • ¼ cup Greek yogurt (or sour cream)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Cook the bacon until crispy, then crumble.
  3. Prep the ingredients by dicing the turkey, halving the tomatoes, shredding the lettuce, and cubing the cheese.
  4. Make the dressing by whisking together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, salt, pepper, and parsley.
  5. Combine everything in a large bowl, tossing the pasta, turkey, bacon, tomatoes, lettuce, and cheese together.
  6. Pour the dressing over and mix gently to coat.
  7. Chill for at least 30 minutes before serving for best flavor.

Notes

  • Add the lettuce right before serving to keep it fresh and crisp.
  • For extra crunch, add chopped cucumbers or bell peppers.
  • If the pasta absorbs too much dressing, stir in a tablespoon of extra mayo before serving.
