1. For the Chicken Scampi:

  • 2 large boneless, skinless chicken breasts, sliced or pounded thin

  • ¼ teaspoon red pepper flakes (optional)

2. For the Garlic Parmesan Rice:

  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup jasmine or long grain white rice
  • 2 cups chicken broth
  • ½ cup freshly grated parmesan
  • 1 tablespoon butter (to finish)
  • Splash of milk or cream (optional)
  • Salt and pepper to taste

Instructions

  • Start by making the rice: sauté garlic in butter, then stir in rice and toast for 1 minute. Add chicken broth, bring to a boil, reduce heat, and simmer covered for 18–20 minutes. Stir in parmesan, butter, and a splash of milk. Season and keep warm.
  • Season chicken with salt and pepper. Sear in olive oil and butter over medium-high heat until golden and cooked through. Remove and set aside.
  • In the same skillet, sauté garlic and red pepper flakes. Deglaze with wine, reduce, then add broth and lemon juice. Simmer, then swirl in butter.
  • Return chicken to the skillet to warm through in the sauce.
  • Serve over garlic parmesan rice. Garnish with parsley and parmesan.
