- 3 cups cooked chicken, diced or shredded
- 1 cup red grapes, halved
- 2 stalks celery, diced
- 2 green onions or ¼ red onion, finely chopped
- ½ cup mayonnaise
- 1 tsp Dijon mustard
- 1 tbsp lemon juice (freshly squeezed)
- Salt and black pepper, to taste
- ½ cup toasted pecans or walnuts, chopped (optional)
- 1 tbsp chopped fresh parsley or tarragon (optional)
Instructions
- Cook and cool your chicken if not using rotisserie. Dice into bite-sized pieces.
- Toast the nuts in a dry skillet over medium heat until golden and fragrant. Let cool.
- Halve the grapes, dice the celery and onions.
- In a large mixing bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Add chicken, grapes, celery, onion, and herbs. Gently fold until everything is coated.
- Fold in the toasted nuts just before serving.
