Description

Ingredients

  • 2 chicken breasts or thighs
  • 1 cup jasmine or brown rice
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Toppings: Avocado, shredded carrots, cucumber, scallions, sesame seeds

Instructions

  1. Rinse and cook the rice according to package instructions.
  2. Season the chicken with paprika, cumin, salt, and pepper. Heat olive oil in a pan over medium heat. Cook the chicken for 6-7 minutes per side until fully cooked.
  3. Slice the chicken thinly once cooked.
  4. Assemble each bowl with rice as the base. Top with sliced chicken, avocado, shredded carrots, cucumber, and scallions. Drizzle with your choice of sauce.
  5. Garnish with sesame seeds or fresh herbs and serve immediately.
