- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups egg noodles
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped
- 1 tsp lemon juice (optional)
Instructions

- Heat olive oil in a pot, sauté onions, carrots, and celery until softened.
- Add chicken, cooking until lightly browned.
- Pour in chicken broth, add garlic, thyme, bay leaves, salt, and pepper. Simmer for 15 minutes.
- Cook noodles separately until al dente. Drain and set aside.
- Remove bay leaves from soup, stir in cooked noodles and parsley. Add lemon juice if desired.
- Serve hot with optional crusty bread or salad.
Notes
- Noodles can be cooked separately and added just before serving to prevent sogginess.
- Adjust seasoning gradually, tasting as you go.
- Homemade broth elevates the flavor but store-bought works well.
