  • 1 lb boneless, skinless chicken thighs
  • 3 medium carrots, diced
  • 3 celery stalks, diced

  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon juice (optional)


Instructions

  • Dice vegetables and mince garlic. Cut chicken into bite-sized pieces.
  • Heat olive oil in a pot, sauté onions, carrots, and celery until softened.
  • Add chicken, cooking until lightly browned.
  • Pour in chicken broth, add garlic, thyme, bay leaves, salt, and pepper. Simmer for 15 minutes.
  • Cook noodles separately until al dente. Drain and set aside.
  • Remove bay leaves from soup, stir in cooked noodles and parsley. Add lemon juice if desired.
  • Serve hot with optional crusty bread or salad.
