Ingredients
1. For the Patties:
- 1 lb ground chicken (mix of thigh and breast)
- ¼ cup grated onion

- ½ cup panko breadcrumbs
- 1 egg
- 1 tsp Dijon mustard
- ½ tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper

- ¼ cup mayonnaise
- 1 tbsp ketchup
- 1 tsp Dijon mustard
- 1 tsp pickle juice
- ¼ tsp garlic powder
- ¼ tsp paprika
3. Burger Build:
- 4 burger buns

- Butter (for toasting buns)
Instructions
- Combine all sauce ingredients in a bowl. Mix and refrigerate.
- In a mixing bowl, combine ground chicken, grated onion, garlic, panko, egg, Dijon, paprika, salt, and pepper.
- Mix gently until combined and form into 4 patties.
- Heat a skillet over medium heat and add a little oil.
- Cook patties for 6–7 minutes per side, until golden and cooked through.
- Add cheese during the last minute, cover to melt.
- Toast buttered buns on the skillet until golden.
- Assemble: bun, lettuce, patty, tomato, onion, sauce, top bun.
