Ingredients
- 2 cups rotini pasta
- 2 chicken breasts (boneless, skinless)
- 6 slices bacon
- 1/2 cup ranch dressing (store-bought or homemade)
- 1 cup shredded cheddar cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 1/2 cup cucumber, diced (optional)
- Salt and pepper, to taste
Instructions
- Step 1: Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool.
- Step 2: Season and cook the chicken in a skillet over medium heat until golden and cooked through, about 7 minutes per side. Let rest, then chop into bite-sized pieces.
- Step 3: Cook the bacon in the skillet until crispy, then crumble it into small pieces.
- Step 4: In a large mixing bowl, combine the pasta, chicken, bacon, shredded cheese, and vegetables. Pour over the ranch dressing and toss to combine. Season with salt and pepper to taste.
- Step 5: Chill the pasta salad in the refrigerator for at least 30 minutes before serving.
