  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 medium potatoes, diced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups grated cheddar cheese
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • 1 tbsp olive oil or butter


Instructions

  • Sauté onions, carrots, and celery in olive oil or butter until softened.
  • Add garlic and cook until fragrant.
  • Brown ground beef until fully cooked; drain excess fat if needed.
  • Stir in potatoes, beef broth, Worcestershire sauce, Dijon mustard, salt, and pepper. Simmer until potatoes are tender.
  • Reduce heat and stir in heavy cream.
  • Gradually melt in grated cheddar cheese, stirring continuously.
  • Serve hot, garnished with green onions or bacon.
