Ingredients
- 6–7 celery stalks (plus leaves), thinly sliced
- 1/4 cup shaved parmesan cheese
- 1/4 cup toasted almonds or walnuts
- 1 tablespoon chopped fresh parsley (optional)
For the vinaigrette:
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey or maple syrup
- 3 tablespoons extra virgin olive oil
- Salt and black pepper, to taste
Instructions
- Wash and trim celery. Thinly slice the stalks on a diagonal and set leaves aside.
- In a small bowl, whisk lemon juice, Dijon, honey, olive oil, salt, and pepper.
- Toast nuts in a dry pan over medium heat until golden (about 3–4 minutes).
- In a large mixing bowl, combine celery, celery leaves, and parsley.
- Add vinaigrette and toss gently until everything is coated.
- Top with toasted nuts and shaved parmesan.
- Taste and adjust seasoning if needed. Serve immediately.
Notes
If you prefer more crunch, refrigerate the sliced celery in ice water for 10 minutes before tossing with the vinaigrette.
To make it dairy-free, skip the cheese or use a plant-based alternative.
