  • 3 cups cooked and shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream
  • ½ cup chicken broth
  • 1½ cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1½ cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers or panko breadcrumbs
  • 2 tbsp butter (melted)
  • Salt, pepper, garlic powder, onion powder (to taste)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine soup, sour cream, and chicken broth. Add seasoning.
  3. Mix in the shredded chicken, vegetables, and half of the cheese.
  4. Spread the mixture into the prepared dish and top with the remaining cheese.
  5. Combine crushed crackers and melted butter, sprinkle over the top.
  6. Bake uncovered for 30–35 minutes, until golden and bubbly.
  7. Let rest 5–10 minutes before serving.

Notes

You can use rotisserie chicken for a shortcut.

Swap sour cream for Greek yogurt for a healthier version.

Add a pinch of red pepper flakes for a subtle heat.
