These Caramel Apple Blondie Cheesecake Bars are a fall-inspired dessert that combines buttery blondies, rich cheesecake, and caramelized apples. A perfect treat for any occasion, these bars are easy to make and incredibly delicious.

1. For the Blondie Layer:
- ½ cup unsalted butter, melted
- 1 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ¼ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
2. For the Cheesecake Layer:
- 8 oz cream cheese, softened
- ½ cup sour cream
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
3. For the Caramel Apple Topping:
- 3 cups apples, peeled and chopped
- 2 tbsp butter
- ½ cup brown sugar
- 1 tsp ground cinnamon
- ¼ cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Make the blondie layer by mixing the melted butter, brown sugar, eggs, vanilla extract, flour, baking powder, salt, and cinnamon. Pour into the pan and spread evenly.
- For the cheesecake layer, beat the cream cheese, sour cream, sugar, eggs, and vanilla together. Pour over the blondie batter.
- Bake for 45-50 minutes until golden and set. Cool completely.
- Prepare the caramel apple topping by cooking apples, butter, brown sugar, and cinnamon. Stir in the heavy cream and cook for another 2 minutes. Pour over the cooled bars.
