Ingredients

  • 12 oz rotini or penne pasta
  • 1 pint cherry tomatoes, halved
  • 8 oz fresh mozzarella balls, drained and halved if large
  • 1 cup fresh basil leaves, torn
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar or glaze
  • Salt and freshly ground black pepper, to taste


Instructions

  • Cook pasta in salted boiling water until al dente, then drain and rinse with cold water.
  • Combine pasta, tomatoes, mozzarella, and basil in a large bowl.
  • Whisk olive oil, balsamic vinegar, salt, and pepper in a small bowl to make the dressing.
