Ingredients
- 1 medium head green cabbage, chopped
- 1 lb ground beef (lean or regular)
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste (or 1 cup diced tomatoes)
- 6 cups beef broth
- 2 bay leaves
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: chili flakes, Worcestershire sauce
Instructions
- Heat olive oil in a large pot over medium heat. Brown the ground beef, breaking it up with a spoon. Drain excess fat if needed.
- Add diced onion, carrots, celery, and garlic. Cook until vegetables soften, about 5-7 minutes.
- Stir in tomato paste or diced tomatoes; cook for 2 minutes.
- Pour in beef broth. Add bay leaves, thyme, salt, pepper, and optional seasonings. Stir well.
- Add chopped cabbage. Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes.
- Taste and adjust seasoning before serving.
