Ingredients

  • 1 medium head green cabbage, chopped
  • 1 lb ground beef (lean or regular)
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste (or 1 cup diced tomatoes)
  • 6 cups beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: chili flakes, Worcestershire sauce


Instructions

  • Heat olive oil in a large pot over medium heat. Brown the ground beef, breaking it up with a spoon. Drain excess fat if needed.
  • Add diced onion, carrots, celery, and garlic. Cook until vegetables soften, about 5-7 minutes.
  • Stir in tomato paste or diced tomatoes; cook for 2 minutes.
  • Pour in beef broth. Add bay leaves, thyme, salt, pepper, and optional seasonings. Stir well.
  • Add chopped cabbage. Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes.
  • Taste and adjust seasoning before serving.

Notes

  • For a lighter soup, swap ground beef for ground turkey or chicken.
  • Fresh herbs add brightness—add them just before serving.
  • Add a splash of vinegar or lemon juice at the end for enhanced flavor.
