Ingredients

  • 2 large eggs
  • 2 flour tortillas
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tablespoon butter or oil
  • Salt and pepper, to taste
  • Optional: 2 slices cooked bacon or 1/4 cup sautéed spinach

Instructions

  1. Crack the eggs into a bowl, whisk them with salt and pepper.
  2. Heat a pan over medium heat and melt butter.
  3. Scramble the eggs in the pan until just set. Set aside.
  4. Lay one tortilla flat and sprinkle half the cheese. Add scrambled eggs and the rest of the cheese.
  5. Fold the tortilla in half and toast it in the pan until crispy and golden, about 2–3 minutes per side.
  6. Serve warm with salsa, avocado, or sour cream.

Notes
