1. For the Cupcakes

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • ½ cup whole milk

2. For the Pastry Cream

  • 1 ½ cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • 3 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

3. For the Ganache

  • 6 ounces semi-sweet chocolate, chopped
  • ½ cup heavy cream
  • 1 tablespoon unsalted butter (optional)

Instructions

1 .Make the Pastry Cream

  • Heat milk until steaming.
  • Whisk yolks, sugar, and cornstarch.
  • Temper eggs by adding some hot milk.
  • Return to heat and cook until thickened.
  • Stir in butter and vanilla.
  • Chill for at least 2 hours.

2. Make the Cupcakes

  • Preheat oven to 350°F (175°C).
  • Combine flour, baking powder, and salt.
  • Beat butter and sugar until fluffy.
  • Add eggs one at a time, then vanilla.
  • Alternate adding dry ingredients and milk.
  • Fill cupcake liners 2/3 full.
  • Bake for 18-20 minutes. Cool completely.

3. Make the Ganache

  • Heat cream until simmering.
  • Pour over chopped chocolate.
  • Stir until smooth. Add butter if desired.

4. Assemble

  • Core each cupcake.
  • Fill with pastry cream.
  • Top with ganache.
  • Let set before serving.

Notes

  • Pastry cream can be made a day ahead.
  • Use high-quality chocolate for the best ganache.
  • Cupcakes are best served the same day but keep well for 2-3 days refrigerated.
