Ingredients

  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup whole milk yogurt (or sour cream)
  • ½ cup vegetable oil
  • 1½ teaspoons vanilla extract
  • 1 cup fresh or frozen blueberries (floured)
  • Optional: 1 teaspoon lemon zest, 1 teaspoon almond extract


Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan, lining it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat together sugar, eggs, yogurt, oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently.
  5. Add the blueberries and fold them into the batter.
  6. Pour the batter into the prepared pan, smoothing the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a lemony twist, add 1 teaspoon of lemon zest to the batter.
  • For a more indulgent treat, top with a simple glaze made from powdered sugar and lemon juice.
