Instructions
- Preheat your oven to 350°F and grease a 9×5-inch loaf pan, lining it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat together sugar, eggs, yogurt, oil, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, folding gently.
- Add the blueberries and fold them into the batter.
- Pour the batter into the prepared pan, smoothing the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Notes
- For a lemony twist, add 1 teaspoon of lemon zest to the batter.
- For a more indulgent treat, top with a simple glaze made from powdered sugar and lemon juice.
