- 2 cups sliced mushrooms (cremini or white)
- 2 tablespoons freshly ground black pepper (or to taste)
- 2 cloves garlic (minced)
- 1 tablespoon butter
- 1 tablespoon olive oil
- ¼ cup soy sauce (or coconut aminos for gluten-free)
- ½ cup chicken broth
- Fresh parsley (for garnish)
- Salt to taste
Instructions
- Season the chicken with salt and freshly ground black pepper.
- Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, until golden and cooked through. Remove from the pan and set aside.
- In the same pan, melt butter and sauté the mushrooms until tender, about 5 minutes.
- Add minced garlic and cook for another 1-2 minutes.
- Stir in soy sauce and chicken broth, scraping the bottom of the pan to release any browned bits. Let simmer for 5 minutes.
- Return chicken to the skillet, spoon sauce over the chicken, and let simmer for an additional 5 minutes.
- Garnish with fresh parsley and serve.
Notes
- Adjust the black pepper to your taste. For a spicier kick, add red pepper flakes.
