Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 2 cups sliced mushrooms (cremini or white)
  • 2 tablespoons freshly ground black pepper (or to taste)
  • 2 cloves garlic (minced)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ¼ cup soy sauce (or coconut aminos for gluten-free)
  • ½ cup chicken broth
  • Fresh parsley (for garnish)
  • Salt to taste

Instructions

  • Season the chicken with salt and freshly ground black pepper.
  • Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, until golden and cooked through. Remove from the pan and set aside.
  • In the same pan, melt butter and sauté the mushrooms until tender, about 5 minutes.
  • Add minced garlic and cook for another 1-2 minutes.
  • Stir in soy sauce and chicken broth, scraping the bottom of the pan to release any browned bits. Let simmer for 5 minutes.
  • Return chicken to the skillet, spoon sauce over the chicken, and let simmer for an additional 5 minutes.
  • Garnish with fresh parsley and serve.

Notes

  • Adjust the black pepper to your taste. For a spicier kick, add red pepper flakes.
