Description

A creamy, decadent cheesecake topped with fresh strawberries and a crunchy strawberry-cookie topping. Perfect for any occasion.


Ingredients

  • 1 ½ cups crushed graham crackers
  • ¼ cup sugar
  • ½ cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ¼ cup sour cream
  • 1 cup crushed vanilla cookies
  • ½ cup freeze-dried strawberries, crushed
  • 2 tbsp melted butter
  • 1 ½ cups fresh strawberries, sliced
  • 2 tbsp sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 325°F.
  2. Make the crust by combining graham crackers, sugar, and melted butter. Press into a springform pan and bake for 10 minutes.
  3. Prepare the filling by beating cream cheese until smooth. Add sugar and vanilla, then beat in eggs one at a time. Fold in sour cream.
  4. Pour filling over crust and bake for 50-55 minutes. Cool in the oven with the door slightly open, then chill for at least 4 hours.
  5. Toss strawberries with sugar and lemon juice. Top the chilled cheesecake with strawberries and sprinkle the strawberry crunch topping over it.
