- 1 ½ cups crushed graham crackers
- ¼ cup sugar
- ½ cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- ¼ cup sour cream
- 1 cup crushed vanilla cookies
- ½ cup freeze-dried strawberries, crushed
- 2 tbsp melted butter
- 1 ½ cups fresh strawberries, sliced
- 2 tbsp sugar
- 1 tbsp lemon juice
Instructions
- Preheat oven to 325°F.
- Make the crust by combining graham crackers, sugar, and melted butter. Press into a springform pan and bake for 10 minutes.
- Prepare the filling by beating cream cheese until smooth. Add sugar and vanilla, then beat in eggs one at a time. Fold in sour cream.
- Pour filling over crust and bake for 50-55 minutes. Cool in the oven with the door slightly open, then chill for at least 4 hours.
- Toss strawberries with sugar and lemon juice. Top the chilled cheesecake with strawberries and sprinkle the strawberry crunch topping over it.
