Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika

2 . BBQ Sauce:

  • 1 cup ketchup
  • ¼ cup apple cider vinegar
  • ¼ cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tsp garlic (minced or powder)
  • 1 tsp smoked paprika
  • Dash of hot sauce (optional)

3 . For Serving:

  • 46 burger buns or brioche rolls
  • Butter for toasting
  • Coleslaw or pickle slices (optional)


Instructions

  • Season chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  • Sear both sides in a hot skillet with olive oil for 2–3 minutes.
  • Add ½ cup water, cover, and simmer for 25 minutes (or bake/slow cook as noted above).
  • Shred the chicken once cooked.
  • In a saucepan, mix all BBQ sauce ingredients and simmer for 10 minutes.
  • Combine shredded chicken with warm BBQ sauce.
  • Toast buns with butter.
  • Assemble sandwiches with chicken, coleslaw, or pickles. Serve warm.
