Ingredients

  • 1 lb large shrimp, peeled and deveined

  • ½ cup cornstarch

  • 1 egg, beaten

  • ½ cup panko breadcrumbs (optional for extra crunch)

  • Salt and pepper, to taste

  • 1 cup cooked jasmine rice

  • 1 cup shredded lettuce

  • ½ cup julienned carrots

  • ½ cucumber, thinly sliced

  • 1 small avocado, sliced

  • Green onions or cilantro, for garnish

  • 2 tbsp vegetable oil

Bang Bang Sauce:

    • ½ cup mayonnaise

    • 3 tbsp sweet chili sauce

    • 12 tsp sriracha (adjust to taste)

    • 1 tsp honey

    • ½ tsp rice vinegar

Bang Bang Sauce:

Instructions

  1. Pat dry the shrimp and season lightly with salt and pepper.

  2. Dredge in cornstarch, dip in beaten egg, and coat in panko if using.

  3. Heat oil in a skillet over medium-high. Fry shrimp 2–3 mins per side until crispy.

  4. Mix sauce ingredients in a bowl. Taste and adjust spice or sweetness.

  5. Toss fried shrimp in sauce just before serving.

  6. In each bowl, layer warm rice, lettuce, carrots, cucumber, and avocado.

  7. Top with shrimp, garnish with green onions or cilantro, and serve.

Notes

  • For a vegetarian option, substitute shrimp with tofu or cauliflower.
