Ingredients

- 2 tbsp olive or avocado oil
- 1 cup cooked jasmine or basmati rice
- 1 cup shredded cabbage or coleslaw mix
- 1 small cucumber, thinly sliced
- 1 small carrot, shredded or julienned
- 2 green onions, thinly sliced
- Fresh cilantro, for garnish
- 1 tsp sesame seeds
2 .For the Bang Bang Sauce
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1–2 tbsp sriracha (adjust to taste)
- 1 tsp rice vinegar or lime juice
Instructions
- Toss chicken with cornstarch, garlic powder, salt, and pepper.
- Heat oil in a large skillet and cook chicken in a single layer until golden and cooked through. Set aside.
- Whisk together mayonnaise, sweet chili sauce, sriracha, and vinegar to make the bang bang sauce.
- Toss hot chicken with half of the sauce.
- Assemble bowls: rice on the bottom, then chicken, veggies, and a drizzle of remaining sauce.
- Garnish with green onions, sesame seeds, and cilantro.
