Ingredients

Scale
  • 3 ripe bananas
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • 1 cup chopped walnuts

2. For the Frosting:

  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 1 ½ cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a bowl, mash the ripe bananas until smooth.
  • In another bowl, whisk the flour, baking powder, baking soda, and salt.
  • Cream the butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy. Add eggs, one at a time, and beat well.
  • Add the mashed bananas and vanilla extract, mixing until combined.
  • Gradually add the dry ingredients alternately with the buttermilk, mixing until smooth.
  • Gently fold in the chopped walnuts.
  • Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  • Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • For the frosting, beat the cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.
  • Frost the cooled cake and garnish with additional chopped walnuts if desired.

Notes

For extra moisture, consider adding a tablespoon of sour cream to the batter. Toasting the walnuts before folding them into the cake adds depth to their flavor.
