Ingredients

  • 3 ripe bananas, mashed
  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • ⅓ cup unsalted butter, melted
  • ¼ cup milk or buttermilk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon (optional)
  • ½ cup chopped walnuts or chocolate chips (optional)


Instructions

  1. Preheat oven to 350°F and line a muffin pan with liners.

  2. In a large bowl, mash bananas. Add egg, sugars, butter, milk, and vanilla. Stir to combine.

  3. In a separate bowl, mix flour, baking soda, salt, and cinnamon.

  4. Fold dry ingredients into the wet mixture. Add optional mix-ins if desired.

  5. Fill muffin cups ¾ full.

  6. Bake 18–22 minutes or until a toothpick comes out clean.

  7. Let cool 5 minutes in pan, then transfer to wire rack.

Notes

  • Use very ripe bananas for best results.
  • Don’t overmix; gentle folding keeps muffins light.
  • Sprinkle coarse sugar on top for a crispy finish.
