  • 4 fresh cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking dish with parchment paper or grease lightly with olive oil.
  2. Pat the cod fillets dry with a paper towel to remove excess moisture.
  3. Make the seasoning mix: In a small bowl, whisk together olive oil, melted butter, minced garlic, lemon juice, paprika, salt, and black pepper.
  4. Coat the fillets with the seasoning mixture, making sure to cover all sides.
  5. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
