Instructions

  1. Chop the shrimp into bite-sized pieces and place them in a bowl.
  2. Pour fresh lime juice over the shrimp, ensuring they are fully submerged. Let marinate for 30 minutes.
  3. While the shrimp is marinating, dice the avocado, cherry tomatoes, red onion, and jalapeño. Chop the cilantro.
  4. After 30 minutes, drain excess lime juice from the shrimp and mix them with the chopped vegetables.
  5. Drizzle with olive oil, season with salt and pepper, and mix gently to combine.
  6. Spoon the ceviche onto tortilla rounds or cucumber slices.
  7. Garnish with extra cilantro and a squeeze of lime before serving.

Notes

  • For a spicier version, leave the jalapeño seeds in or add a pinch of chili powder.
